Amaranth is a plant that produces a brightly colored flowery head containing a very large number of seeds and is consumed like a grain. Amaranth plants can produce as many as 60,000 seeds! This tiny seed is a highly nutritious gluten-free grain.
Amaranth is loaded with: protein, calcium, magnesium, iron, fiber and many other minerals, vitamins and amino-acids.
It has a porridge-like texture and can be prepared like any other grain in a savory dish but can also very well be prepared as dessert.
I often make this highly nutritious and gluten free grain as breakfast or lunch for my twin boys.
This is just one of the many ways of preparing this insanely yummy grain. My almost one year old twin boys have this for lunch or sometimes breakfast but it can also be served as dessert.
Cook the amaranth in the almond milk on low heat for 30 minutes, leave for 15 minutes. Add almond butter, coconut butter and if you like 1 spoon of organic unsweetened strawberry jam. Seriously fruit and especially fruit in jams are naturally sweet so you don’t need to add any extra sugar.
This recipe is specifically good for vata domininant people as it is highly nourishing and builds the immune system.
