This delicious salad is easy and very nutritious. Coconut oil is perfect to use during summer because of it's cooling properties. It is also often used in Ayurveda because of it's many healing benefits: it aids in proper digestion and metabolism, maintains cholesterol levels, good for the heart and kidney's, great for teeth and bone structure, gives shiny hear, glowing skin and increases overall immunity. Coconut oil can be found in various forms, for salads I use Raw Organic Virgin Oil, it's pure and tastes incredibly good! Because the oil is so full of vitamins, minerals and saturated fatty acids, it can be very well used for massage. The skin is the largest organ so when you are rubbing the oil on your skin it's beneficial for your complete wellbeing.
Organic Vegan Summer Salad with Tofu, Veggies and Coconut oil
Cut the tomatoes in small wedges and mix with broccoli florets in bowl.
Cut the tofu in small cubes. I use olive tofu which you can buy at any wholefood store but you can also use a handful of green olives and cut them into small pieces.
Add the pumpkin seeds, salt and pepper and finish with the scoops of coconut oil.
Toss before serving.
